Making Beef Jerky for the first time!

With Hunter Ligget camp coming up, I thought I should make some beef jerky. (BTW, Patrick's reasoning why it is called 'jerky': "because you jerk when you take a bite".) I called Lana Anastasia up and got her recipe. I mixed together the herbs and spices and the meat out of the freezer to thaw partially. Something happened and I left for most of the day. Soon as I got back, I cut it up, seasoned it, and laid it on the dehydrator. Matthew took it down to the "car-basement" and plugged it in for me. When we got home from Tuesday night meeting, I rotated the trays and checked it. It suddenly dawned on me that it would be too long to leave it until morning! But what was I to do? I didn't know if it would be okay to put it in the fridge overnight and start again in the morning...? So I set my alarm for 2 and 1/2 hours and checked it/rotated trays. Still not done. Another 2 and 1/2 hours. Rotated, still not done! Another 2 hours later, I crawled out of bed and crept downstairs for the third time saying, "Done or not, it is going in the fridge!" I didn't really know what it was supposed to look like, but it seemed to be about right, so up the steps balancing the trays, in the fridge it went, and I fell into bed and asleep... My head had barely hit the pillow when Matthew's alarm went off, or so it felt! I'm NOT ready for a puppy though when I saw this picture of David and Genna's, I almost changed my mind! |
